2 tablespoons Majestic Blue Flower Tea

1½ cups freshly boiled water

2 tablespoons elderflower cordial

2 tablespoons fresh lemon juice

½ cup chilled sparkling water

1–2 teaspoons simple syrup, optional

Lemon twists, blueberries and food-safe blue flowers for garnish

  1. How to Make

    Place the Blue Flower Tea in a teapot or infuser. Pour the freshly boiled water over it and steep for 7–10 minutes, until the tea develops a rich blue color.

    Strain the tea and stir in simple syrup while it is still warm, if desired. Let it cool at room temperature before refrigerating until completely chilled.

    Stir the elderflower cordial into the cold tea. Fill two elegant glasses with clear ice and divide the tea between them.

    Add sparkling water slowly so the bubbles remain lively. Serve the lemon juice in a small pitcher or add it at the table for the color-changing moment.

    Pour the lemon juice into each glass and watch the blue tea turn violet. Stir gently and garnish with lemon, blueberries and a food-safe flower.

    Tea Substitution

    Use Concord Grape Tea for a deep purple fruit version. It will be delicious, although it will not produce the same dramatic color change.
